    Sorry…this post is a day late. I posted this results vid on TikTok…but forgot to upload it to here! So…this is yesterday’s progress update (day 81).

    Our journey to a healthy lifestyle has not been easy, but it has been rewarding. We have a long way to go, but we are going to learn from… and enjoy… this ride.

    When times get hard and we fall, we can trust that God will help pick us back up. We’re in it for the long haul. Healthy and balanced living is our goal! With God’s help, we’ll reach that goal…and achieve so much more!

    81 days down…a lifetime to go!

    1/2 cup Cottage Cheese with 13 crushed Cheezits on top; Chobani Key Lime yogurt with 1/16 cup of Naked Bear Vanilla Almond Granola on top; and a sliced medium tomato! Yummy!

    First day back in the classroom after 2 months of summer vibes and the new fitness and nutrition regimen!
    Gotta keep those lunches healthy and get that water intake dialed in!

    Some trips to the farmers market or produce stand are for little…but important purchases! Today was a day like that! All we need were purple hill peas, cream peas, and ‘maters! Got’em!!!

    There’s gonna be some good eating tonight y’all!

    A solid healthy diet starts with the intention and determination to eat health. Be wise when shopping for foods. If possible, get them fresh from your garden. If that’s not possible, try your local farmers market or produce stand (shout out to Eli’s Roadside Produce here in Round Rock). The fresher the better.

    Whatever you do, be intentional about finding the right foods that will benefit you from the inside out! Fresh fruits and vegetables are a good place to start. And they taste DELICIOUS! Remember…the road to a healthier lifestyle starts with baby steps y’all!

    Healthy Lifestyle Routines: New Walking / Hiking Trail; Brushy Creek; Hidden Gem!

    Courtney and I stumbled across a hidden gem on the outskirts of Leander, Texas! It’s not a long trail…maybe 2 miles, but it’s fun, great scenery, and shaded…tons of overhead trees!

    In our quest to find fun places to workout, we are going to start documenting our discoveries and sharing them with y’all! So many of you have asked where you can go to workout in cooler shadier places…and we’re actively looking.

    We also want to share all the cool places we walk that might be a little warmer (especially in summer) but worth the trip! Who knows, we might just make this our new life. Traveling across America to find awesome walking trails where we can get our 45 minute walks in…two teachers trippin’! I’m so hashtaging that!

    One of our newly created recipes. We’ve been experimenting and trying new ideas as we journey down the road of healthy living.

    Grilled Chicken Fajita Lettuce Wraps:

    • Slice up last night’s grilled chicken
      and put it in a gallon size storage bag!
    • Add in fresh sliced onions, green peppers,
      and tomatoes from the farmers market!
    • Add 2-3 tsp. Of olive oil AND sprinkle in
    • your favorite fajita seasoning…
    • then mix up all the ingredients in the bag!
    • Cook it on your favorite skillet (or pan)!
    • Put the grilled goodness in a
      Heart of Romaine lettuce leaf!
    • Top it off with jalapeños, feta cheese, or any of your favorite fajita fixings!

    Healthy Lifestyle Update (7-31-22): Y’all Rock!; Eat Healthy and Exercise; Encouragement; Eye Boogers; Chivalry

    When we start living a healthy lifestyle, we begin to bring physical health, mental well-being, and spiritual growth into balance. For Courtney and I, the journey thus far (78 days) has been fun, rewarding, challenging, sometimes painful, but so worth it!

    A big part of our success so far has been y’all! You’ve encouraged us…inspired us…and given us a chance to talk all things healthy living. And because of that, we are grateful.

    We understand that without God’s strength and guidance, in addition to your words, posts, and messages of encouragement, we would not have had as much success in the areas of mental shift, focus, weight loss, nutrition (healthy eating), and farmers market finds!

    Y’all are incredibly amazing friends, and we look forward to our continuing journey together as we progress down the road to a better life for all of us!

    75 Hard DONE! So…What’s Next; Lifelong Fitness Goals

    Holy Cow, WOW! #75hard has been a #blessing! An extremely hard, #bloody, limit testing blessing! I can’t say enough how important it was for me to count on #God through the whole experience. ‘Cause if it’s been up to me and my sometimes defeatists #attitude…i’d given up in the first week.

    But I was #determined to put my #faith in God through the #challenge and #trust in His #strength to carry me through…and that strategy paid off.

    So what’s next? The same thing I’ve been doing for another 15 days!!!
    Why? Because I want to make sure the #healthy #habits I picked up in the 75 Hard challenge STICK!

    Oh…and Courtney is down another pound bringing her total amount of weight lost to 23 POUNDS! So #proud of that #girl!

    Today’s Garden Fresh Produce Haul!

    Today we visited the “Tuesday Farmers Market” in Sun City (Georgetown) Texas! The farmers markets around our county aren’t open “daily” Per se…but there are enough of them throughout the country that are open in one spot for one day a week to get the fresh produce you need throughout the week. Today…Sun City farmers market!

    The main search lately, has been the quest to find ripe red tomatoes! The heat has been destroying a lot of produce from the farmers we buy from, but tomatoes especially, are getting hit hard. Which is NOT good because I like one tomato with my lunch and one with my dinner each day! Delicious! So we’re always on the lookout for ‘maters…as you can see in the picture below.

    Todays garden fresh vegetables haul: purple onions, zucchini, tomatoes…LOTS of tomatoes, yellow squash, and new potatoes! Yummy!!!

    Health And Fitness Baby: New Walking / Hiking Trail; Sunday Weigh In; Produce Stands; Amazing Food

    Howdy everybody!
    We’re walking the beautiful… actually we just discovered these trail.
    This is the Rabb House… Brushy Creek Trail at the Rabb House in beautiful Round Rock, Texas. It’s is amazing. It’s beautiful.
    Sadly, we never knew this thing existed. It’s awesome.

    Today is a weigh-in day…it is Sunday. As of today, I am down 81.8 pounds since May 15. So that’s huge.
    Books and reading are going great. Love them. I’m almost finished with my fourth book in just as much time (since May 15). So as a dyslexic that’s pretty good. Because I typically don’t like to read. These books are amazing. So I look forward to continuing to read even after I finish this little portion of our health journey.

    Water intake is going great. Yep!

    Everything else is going really good.

    If you get a chance and you’re in the Round Rock area, look for…oh, I can hear the baseball game at the Dell Diamond too. So we’re pretty close to that. If you’re in the area and you’re looking for a place to walk or hike, The Brushy Creek Trail at The Rabb House is really nice. Like this is a blessing!

    I totally forgot today was going to be a farmers market day. But what we thought was a farmers market was not a farmers market. It was more like art and jewelry and stuff. So we ended up going to our local produce stand which we love. Eli’s produce…if you’re in the Round Rock area…Eli’s produce on 79…amazing, amazing produce.

    Got some really good food. So we had some fresh green beans. We had purple hill peas. We had pork loin. And we had mini new potatoes baby potatoes. YUMMY!

    So, if you can’t find a farmers market, or they’re closed for some reason… go find your local produce stand… they’re just as good.
